Mango Lassi

When I was in Madison last, passing through to head back to Michigan, Alexis took me to a fabulous Indian Restaurant, Swagat. She encouraged me to try their mango lassi. It’s similar to a mango milkshake but is made with yogurt not ice cream and milk. I took one sip and fell in love. However, I live in the country in Michigan and one day I was craving mango lassi.

I found a recipe by Jamie Oliver on the Food Network Channel’s website. His units are ounces and I converted it to cups. I used canned unsweetened mango pulp which I purchased at a local Indian grocery store, World of Spices, in Kalamazoo. It turned out lovely, but I blended it too much leaving it a bit more frothy than I would have desired.

Ingredients:
1 1/8 cups of plain yogurt
Little over ½ cup of milk
¾ cup of mango pulp (I like a strong mango flavor, Jamie used about ½ cup)
4 teaspoons of sugar (to taste)

Directions:

1. Put all ingredients in the blender and mix till combined.

2. Pour into individual glasses and serve.

According to Jamie this is 4 servings. Yum! So about 2 servings for me! According to online sources, left over mango pulp can be frozen if you plan on not using all of it in the allotted life time span for the mango pulp. I personally use all mine up in more mango lassis or mango frosting or mango cupcakes.

Mango Lassi 2

Well, I wasn’t perfectly happy with how my first mango lassi turned out so I consulted with my roommate. She shared her recipe with me and I love it! It’s a simple 2 parts mango, 1 part milk, and 1 part yogurt. No sugar. It’s creamier than Jamie Oliver’s mango lassi and has a strong mango flavor. However, no blender, we use a shaker/jar/my nalgene bottle.

Also, make sure to stir up your yogurt so it’s nice and smooth for blending. The smoother it is, less chunks in your mango lassi.

Ingredients:
1 cup of plain “stirred” yogurt
2 cups of mango pulp
1 cup of milk

Directions:

1. Put all ingredients in a shaker (in my case nalgene bottle) and shake vigorously till combined.

2. Pour into individual glasses and serve. It makes about 3 servings.

    Mango Lassi 2 is a must try recipe. I loved it and the recipe is so simple.
