Edamame Hummus

This is a great way to incorporate the edamame into your diet.  It’s a fun alternative to the traditional chickpea/garbanzo bean hummus.  The texture is a bit chunkier and grittier but it is delicious with your favorite crudités.  The kitties were even interested in it.  So for your next pot luck or party, bring this to shake things up.  This recipe is from Self Magazine.

What you need…

1-12 ounce bag frozen edamame
3 cloves garlic
2 tablespoons tahini (sesame seed paste)
3 tablespoons lemon juice
2 tablespoons olive oil
¾ teaspoon salt
½ teaspoon ground cumin
¼ teaspoon black pepper

How to…

  1. Add frozen edamame to a pot of water.  Make sure that there is enough water to cover the edamame.  Stir occasionally.  Bring to a boil, and cook for about 3 minutes.  Drain is a colander and run under cold water.
  2. Place edamame, garlic, tahini, lemon juice, oil, salt, cumin and pepper in a food processor.  Pulse the mixture until it is the consistency of guacamole.
  3. Serve or refrigerate till read to serve. Helpful hint.  Add a tablespoon of water at a time if the mixture is too thick.
