Roasted Peppers

For any recipe that requires roasted peppers I have done all of my roasting on a grill pan right on the gas stove burner.  But you can broil them or hold them over the open flame of the gas stove.

  1. Put the peppers on the grill pan and allow the skin to blacken and blister.
  2. Put in a plastic bag and sweat the peppers for at least 15 minutes.
  3. PUT ON GLOVES (or PROTECT YOUR SKIN)!  Take out the peppers and rinse under cold water.
  4. Peel off the skin, this should come off fairly easily.
  5. Split the peppers and scrape out the pith, seeds and cut off the stem.

That’s it!  Now you can enjoy and depending on the recipe you might want to keep the charred skin for a smokier flavor.  Happy eating.
