Oreo Cupcakes


Wow, I am soooo glad that it has cooled down. Earlier this week it was about 90 degrees and humid for 4-5 days in a row. This is particularly painful because my little apartment doesn’t have AC so Aya (my kitty) and I were doing as little moving as possible while camping out in front of fans. Needless to say high temps means there is no baking because that would be insane. But this heat wave was snapped by massive thunderstorms on Wednesday so the baking can resume. As I was cropping some of the pictures today for the cinnamon roll cookies I found some great recipes that I had forgotten to post! The first is a super tasty Oreo cupcake that I had made for a good friend’s birthday. My friends (old lab mates) were in Chicago for the weekend for a wedding but were able to sneek up to Madison for a day. Since it was the weekend after my friend’s birthday I wanted to make him an awesome b-day treat. The request was something Oreo inspired. After pouring over countless possible oreo desserts I decided that an Oreo cupcake would be perfect.

Cinnamon Roll Cookies


Whoa…time seemed to have flown these last few months. Sorry I have been essentially dead to my own blog. But the few of you who actually visit it probably has already made fun of me for this. Things here have gotten to a level of crazy that I can’t really describe. I have begun hunting for a postdoctoral position (more research after I get my degree) and have also begun writing my thesis. That has so far been kind of a disaster. I think I spend more time deleting than any actual writing. Oh well, I hope that changes soon because I don’t think you can turn in blank pages for your major parts of the thesis. Aside for procrastinating from work, the major reason I was motivated to write up a post is that I made the most adorable cookie last week! A couple of graduate students and I have been working really hard trying to complete a set of experiments so for a little treat I wanted to bring in some cookies. On of the grad students adores essentially everything thing cinnamon. For a few weeks she has been having/giving into a cinnamon roll craving. Inspired by her love for cinnamon rolls I found a cinnamon roll COOKIE recipe that I just had to try out.

Chocolate Banana Cupcakes with Truffle and Peanut Butter Cream Cheese Frostings

Hey all, sorry that I have been kind of missing in action lately but luckily Kiki posted some recipes.  While she was in town a few weeks back we did manage to try out her mango lassi recipe which was FABULOUS!  So delicious and creamy with an amazing mango flavor…so if you get a chance give that recipe a try.  Enough praise for Kiki’s recipe today it is my turn to post a delicious one.  Today I am posting a recipe for banana chocolate cupcakes with a truffle and peanut butter cream cheese frostings.  I know it is a mouthful but I guess you could call it an “Elvis” cupcake instead.  These cupcakes were thought up for my friend’s party.  My friend made an amazing plantain lasagna and since he was feeding us all dinner I thought I would bring some dessert.  Though I am pretty sure we all ate enough that night that we didn’t have to eat again for a few days. Chocolate Ganache

I can not tell you all how much I love frostings.  Not that butter and powdered sugar stuff, but cream cheese, Swiss meringue buttercream, mascarpone and chocolate ganache frostings.  Sometimes I think that I could eat cardboard as long as it was covered with frosting.  This particular frosting is a standard chocolate ganache but made with a higher chocolate to heavy whipping cream ratio so that the truffle filling would be thick enough to pipe on a cupcake.  I love to use this filling on top of devils food cake it makes for one incredible chocolate fix.  This should be enough to frost a cake. Kung Pao Chicken

A colleague of mine at the biological station is undergoing chemotherapy.  A group of us decided to take turns cooking for her provide a little help and relief as she undergoes this trial in her life.  One dish I made was kung pao chicken from the magazine Cooking Light with a few minor adjustments, no peanuts, white meat, fresh ginger, more veggies and more garlic.

It turned out pretty good.  I also made a vegetarian version for my roommate substituting cubed extra firm silken tofu for chicken.  It was tossed in last few minutes of cooking. Continue reading
