Chocolate Caramel Apples

I wanted to make caramel apples this year with my husband.  We went to an apple orchard and picked apples for my birthday.  We got beautiful honey crisp apples at Aamodt’s Apple Farm near Stillwater, MN.  Their apple cider was delicious on the cool Saturday morning and their apple bratwurst was surprisingly good.

I’m a fan of Martha Stewart for my baking and sweets in general.  I gave this recipe a whirl and found it a bit disappointing.  My caramel was not thick enough and would have served better as a dipping sauce which is how I used it after a coating for the apples. Continue reading

Chocolate Cake in a Mug

In October, once again passing through Madison-this time to Minnesota, after dinner Alexis and I had a severe chocolate craving.  We didn’t want to head over to Trader Joe’s so we decided to make “instant” chocolate cake.  After a little bit of googling, we came across a 5 minute recipe from the blog, Dishing, What’s cooking in the world of food.

I enjoyed it.  Mostly because it took such a short amount of time and the novelty of dessert other than cocoa in a mug.  However, the closer one edged to the bottom of the mug, the richer the cake became.  Despite having a super sweet tooth, I had to stop.  All of the chocolate chips fell gravitated to the bottom of the cup creating a layer of chocolate ooze. Tortilla Soup

When your life is busy, one’s to do list just keeps getting longer.  I’ve been saving up entries for this blog but often find myself with little time to write them.  After a bit of prodding and guilt, Alexis has finally worn me down.  Let’s start with the recent culinary adventures.

Mango Lassi

When I was in Madison last, passing through to head back to Michigan, Alexis took me to a fabulous Indian Restaurant, Swagat. She encouraged me to try their mango lassi. It’s similar to a mango milkshake but is made with yogurt not ice cream and milk. I took one sip and fell in love. However, I live in the country in Michigan and one day I was craving mango lassi. Chocolate Crinkle Cookies

Though I have only been posting recipes once every few weeks I have been baking, cooking and taking pictures in the mean time.  Tonight I got a little ambitious baking for a friends birthday treat.  About a week ago I thought it would be a great idea to make six little heart cheesecakes and about four different flavors.  There ended up being one peanut butter (with a dollop of chocolate on top), two plain (with strawberry coulis), two tuxedos (layer of chocolate and a layer of white chocolate) and a passion fruit cheesecake…not to mention garnishes!  So while I wait for those little beauties to bake I decided to write a backlogged post instead of analyze data for work.  Today’s post is for Chocolate Crinkle Cookies!  Don’t worry the little cheesecakes will definitely be a future post.

These little chocolate cookies were made for the Christmas boxes our group hands out to the janitors, glassblower and machine shop to show our appreciation for their help over the year.  The crinkle cookies turned out chewy, light (in flavor) and beautiful since they were dusted with powdered sugar and the dark chocolate cookie was peeking through the cracks.  Yum!  Continue reading
